Easy Veggie Quinoa Lunch
Quinoa is one of my new cooking essentials. Packed with protein this pseudo-cereal is full of nutrients and essential vitamins. I like to make a big batch and just keep it in the fridge to re-heat throughout the week. I have replaced rice, oatmeal (yes this is delish for breakfast too), and even dishes I would typically use pasta with.
This lunch was so good and so filling-which is very important for me for lunch because if I don't get full, I snack snack snack.
To throw this dish together, soak and cook your quinoa according to the directions on the box or bag. Typically it is rinsed and then boiled in water for a few minutes until fluffy (much like rice). I seasoned mine with a pinch of garlic salt, pepper, oregano, and basil.
If you can pull your pre-made portion out of the fridge and heat it in the microwave, even better!
Next, slice up some of your favorite veggies. I used summer squash, zucchini, mushroom and a handful of baby spinach. Throw it all in your pan with some EVOO and saute.
Mix the veggies with your quinoa and enjoy!
