Insta-food: BBQ Chicken Quesadilla
This thrown together recipe was oh-my-goodness good. It was one of those end of the week nights when you just have a bunch of random components of a meal...but nothing that screams "make me for dinner!". Then it hit me! My husband's two favorite things-BBQ chicken and Mexican food! BBQ chicken quesadilla was born! This was sooooo delicious yall and so filling. Like, my very hungry husband and I could have split one. Try it! I promise you wont be disappointed...unless you hate delicious things.
BBQ Chicken Quesadillas
2 Chicken Breasts
1 white onion, sliced
1 Cup pineapple chunks
2 tortillas
Mexican cheese
Your favorite BBQ sauce (I suggest not using Honey BBQ)
Juice of 1 lime
1/4 C pineapple juice
Ceyene pepper
EVOO
1.Combine about 1 cup of your BBQ sauce, lime juice, pineapple juice, and ceyene pepper in a small bowl and brush some onto the chicken breasts.
2. Place the chicken, pineapple and onion on the grill and cook until no longer pink and the onion and pineapple have grill marks and are tender(ish).
3. Remove items from grill and allow to cool slightly. Dice chicken and onion and mix with the remaining BBQ concoction until coated.
4. Heat EVOO in pan over Medium heat and place torilla in pan. Cover half of the tortilla with chicken/onion mixture, pineapple chunks and mexican cheese. Fold over the top of the tortilla to make a quesadilla. Flip after cheese is melted to brown other side of tortilla.
5. Top with your favorite salsa and fresh pineapple slice (optional)
