Greek Yogurt Banana Bread
It has been getting c-c-c-cooold here in Lynchburg at night. My sweet husband has been working lots of late nights due to the overlap of football and basketball season which leaves me alone on these chilly nights with nothing to do but BAKE. Ok..I have lots of other things to do. Like homework for my current grad classes, or laundry, or dishes. But remember, I mentioned it was cold and that means I just have to fire up my oven to bring that yummy delicious coziness back into my home.
This past weekend I had 3 ripe bananas just begging to be turned into some delicious bread. This recipe makes a deliciously dense bread without an overbearing banana taste. Perfect for pairing with your favorite coffee!
What you'll need
1/2 C (1 stick) butter, softened
1 C sugar
2 eggs
1 Tsp vanilla
3 ripe bananas mashed
4 Tbsp Greek yogurt
1 1/2 C whole wheat flour
1 Tsp baking soda
1/4 Tsp salt
Optional: chocolate chips
Preheat oven to 350 degrees and grease loaf pan with coconut oil.
In mixing bowl, cream together butter and sugar on medium speed.
Add eggs, vanilla, banana pulp, and yogurt, mixing well after each ingredient addition.
In a separate bowl, mix flour, baking soda, and salt to combine.
Gradually add dry mixture to wet and mix until just combined on low speed.
If adding chocolate chips, stir them in now.
Pour batter evenly into 4 small loaf pans and bake for 30 minutes, or until toothpick comes out clean.
