Perfect Apple Pie
I got to do some of my very favorite fall activities last weekend and it has me feeling festive y'all! My sweet friend and MOH came down to visit and stay with Mike and I and check out all the progress we've made on the house (pictures coming soon...I promise). We decided to make it a full blown fall fun filled weekend and went to the best little apple orchard with some amazing mountain views, carved pumpkins and made some delicious fall recipes.
Anyways, back to the best pie you've ever tasted. We got far more than our money's worth of apples at the orchard and packed our little sack to the brim! And what's a girl to do when she's got apples coming out of her ears?...bake a pie!
Here's what you'll need:
2 pie crusts (any recipe or pre-made crust will do!)
About 6 apples-peeled, cored and sliced and diced
1/2 c sugar
2 tbsp whole wheat flour
1 tbsp apple pie spice
1/4 tsp salt
1 tbsp fresh lemon juice
Handful of carmel candies
1 tbsp almond milk (or soy, skim, whole, whatever you have works)
Easiest pie ever: Preheat oven to 425. Place one of your crusts in an un-greased pie dish and press firmly to fit.
In a large bowl, mix apples and all other filling ingredients and stir until apples are evenly coated. Once ingredients are combined, spoon filling into your prepared pie crust. Place second crust on top and either cut several slits in top crust or slice into strips and create basket weave design.
Bake for 40 to 45 minutes until apple filling is bubbling and crust is golden brown.
Optional carmel drizzle: Melt caramels with milk until smooth and drizzle on-top of finished pie.
