Sugarless Berry Cobbler

Oh. My. Yum.
I am a sucker for cobbler. Baking with fruit is one of my favorite things to do because they add so much natural sweetness and bursts of juicy flavor, they simply don't need to be messed with! I am always trying to cut out refined sugar where I can in my baking and what better place to do that than in an already sweet-e-nuf berry cobbler!
(The ice cream, however, is not sugar free, but also optional)
This recipe uses the natural sweetness of the berries, and honey to blow your taste buds away. That being said, this is a "no sugar added" dessert. Not a sugar free dessert (fruit and honey have naturally occurring sugar). 
(Yes, that is a tiny bite missing from the corner because I just couldn't wait to sample)


Sugarless Berry Cobbler
Berry filling
2 cups of your favorite berry mixture (I used Sam's Club frozen berry mixture)
1/4 cup honey
4 Tablespoons flour (whole wheat suggested)
Crumble topping
3/4 cup flour
1/2 cup old fashioned oats
1/2 cup honey
1 stick of Margarine

1. Preheat oven to 375 degrees and grease a 8x8 baking dish
2. In a saucepan, heat your berry mixture and honey over medium heat until berries become a pie filling consistency. Stir in flour.
3. Pour your berry compote into baking dish
4. Mix the remaining flour, oats, and honey. Add in butter and mix with your hands until large dough like clumps form
5. Sprinkle the dough over your berry mixture
6. Bake about 45 minutes, until filling is bubbly and topping is golden brown

The ice cream kind of made a world of difference. I mean... you can't be from the south and not add a heaping scoop of ice cream to your cobbler yall!
