"Cleaned Up" Chicken Saltimbocca
Chicken saltimbocca is one of my favorite meals to order when we go out for Italian. We have a restaurant here that ROCKS it and serves it with a heaping portion of buttery penne pasta. Add in the appetizer of italian bread and dipping oil and we're talking CARB OVERLOAD.
Chicken Saltimbocca is traditional coated in flower and friend in buttery white wine deliciousness.
If I made this version of this classic meal every time I had an Italian craving, me and the hubby would be 300 lbs. Long story short, we love Italian food, so I've been on a mission to "clean up" some of our favorites so I don't have to serve up dinner with a large side of guilt.
This chicken dish is so good on its own, I promise you won't even miss the pasta.
Cleaned Up Chicken Saltimbocca
2 boneless, skinless chicken breasts
Freshly chopped basil
Sage
Thin sliced provolone cheese
Thin sliced prosciutto
Sun dried tomatoes
Dry white wine
Organic, low sodium chicken broth
1. Preheat oven to 375 degrees
2. Season your chicken with basil and sage. Layer with slice of provolone and then wrap the chicken in the prosciutto slice (pictures below).
3.Place in baking dish and splash with chicken broth and white wine and sprinkle with sun dried tomatoes
4. Bake in oven for 25-30 minutes, until prosciutto is crisp and chicken is no longer pink.
5. Serve with a side of green veggies!
