Buttermilk French Toast

This past weekend was Michael's 25th birthday! Last year we got engaged on this special day, so I knew I'd have to go all out to try and live up to the birthday expectations around here. 
Michael and I love extravagant breakfasts, so I decided to make some buttermilk french toast for my sweetheart on his day.

French bread is a necessity for good french toast.
I use a shallow dish for the batter and allow the bread to slowly soak up the buttermilk goodness.
Berry compote and precious mini flag optional :)

Buttermilk French Toast
1 loaf of french bread or french baguette 
3/4 cup buttermilk
2 eggs
1 tsp vanilla 
1 1/2 tsp honey 
pinch of salt 
dash of cinnamon
1 tbsp coconut oil

With your whisk, mix together all ingredients except coconut oil. Pour batter into a large flat dish (I used a pie dish). Let pieces of bread soak for about 20 minutes, flipping half way through.

Let skillet heat on medium heat and coat the bottom of the skillet with your coconut oil. Once skillet is hot, add your pieces of bread and cook for about 5 minutes on each side or until brown and cooked through.

Top with berries, maple syrup or honey and enjoy!
